De houtoven gooit een gloed over de open keuken, oranje vlammen die telkens even opflakkeren als er weer een pizzaschep in gaat. Popart aan de muur, discomuziek van Pino D’Angio op de achtergrond, een geroezemoes dat nooit stil valt. In Amsterdam-Noord, net voorbij de NDSM-werf, ruikt het naar gesmolten kaas en gebrande houtsnippers en dat is precies de bedoeling.
We ploffen neer aan een lange tafel en krijgen de kaart voor onze neus. Compact, twee kantjes, geen eindeloze opsomming van veertig soorten pizza. Zorgvuldig samengesteld, zeggen ze hier, wat in de praktijk betekent dat we alsnog twintig minuten nodig hebben om te kiezen.
Van fine dining naar funky pizza’s
Europizza begon als een lockdownexperiment van het team achter Restaurant Europa in Zaandam. Toen fine dining stilviel, gooiden ze het roer om: van verfijnde sauzen naar zuurdesembodems, van tweesterrenambitie naar een houtoven in een oude loods. Eerst als diepvriespizza’s in Amsterdamse restaurants, later als volwaardige zaak in Noord. Hetzelfde vakmanschap, alleen dan op een schijf deeg.
Amsterdam-Noord is de proeftuin geworden voor dit soort verschuivingen, al gaat dat niet altijd goed. Sommige concepten verzanden in creativiteit zonder dat het écht smaakt. Europizza bewijst het tegenovergestelde: gedurfd en overtuigend kunnen wel samen.
Miso op een houtovenbodem
We gaan voor de formule voor twee: snacks, kleine gerechten, één pizza om samen te delen, dessert. De enige knoop die we zelf moeten doorhakken is de pizzakeuze, voor de rest laten we ons meevoeren. Eerst komt de zeeduivel ‘charcuterie’ met zwarte peper, de vis boterzacht en verrassend vlezig, met een extra vergine olijfolie die net genoeg bitter geeft om het af te ronden.
Dan schenkt de serveerster een klein slokje natuurwijn in. “Een beetje funky, maar het past bij het gerecht,” zegt ze met een knipoog. We nemen een voorzichtige slok. Oké, schenk maar vol.
“Witte miso, verse tomaat, mozzarella en polder parmezaan, waarom kwam niemand hier eerder op?”
De pizza die alles verandert
Dan de pizza. We scheuren een punt af, want snijden is voor amateurs, en ruiken eerst. Rokerig door de houtoven, een vleugje basilicum, iets ziltigs onder de kaas. De korst is dik en krokant tegelijk, de miso geeft een diepte die je bij geen enkele andere pizzeria in de stad vindt en de frisse tomaat houdt alles precies in balans.
Wat Europizza bijzonder maakt, is dat de kaart meebeweegt met wat er op dat moment goed is. Kleinschalige producenten, seizoensgroenten, maar ook wereldse smaken als miso en zeewier. Geen honderd procent lokaal restaurant dus, wel een plek waar over herkomst wordt nagedacht voordat het op het bord landt.
Filterkoffie in plaats van cappuccino
Net als we denken dat het niet beter kan, verschijnt er een bolletje hazelnootijs met koffiesiroop. Romig, nootachtig, precies de juiste hoeveelheid zoet. Erbij een eerlijke bak filterkoffie in plaats van een opgeklopte cappuccino, wat hier eigenlijk logischer voelt dan een dessertwijn.
De sfeer blijft ondertussen ongedwongen: lange tafels, mensen die elkaar over de schouder aankijken om te zien wat er bij de buren op het bord ligt, een bediening die zelf ook gewoon plezier lijkt te hebben. Niets hier voelt uitgedacht, ook al is dat natuurlijk precies waar zoveel zorg in is gaan zitten.
Buiten, op de late fiets terug langs het water, drijft er nog een laatste geur van houtvuur mee. Iemand op de stoep bij de overkant staat een sigaret te roken naast zijn bakfiets en knikt kort als we voorbij rijden, alsof hij precies weet waar we vandaan komen.
The wood oven throws a glow across the open kitchen, orange flames flickering every time another pizza peel goes in. Pop art on the walls, Pino D’Angio spinning in the background, a hum of conversation that never quite dies down. In Amsterdam North, just past the old NDSM shipyard, the air smells of melted cheese and charred wood chips and that is exactly the point.
We settle at a long communal table and get handed the menu. Two pages, no endless list of forty pizzas. Carefully curated, they say, which in practice means we still need twenty minutes to decide.
From fine dining to funky pizzas
Europizza started as a lockdown experiment by the team behind Restaurant Europa in Zaandam. When fine dining ground to a halt, they flipped the script: from refined sauces to sourdough crusts, from Michelin ambition to a wood oven in an old warehouse. First as frozen pizzas sold in Amsterdam restaurants, later as a full restaurant in the North. Same craftsmanship, just on a disc of dough now.
Amsterdam North has become the testing ground for shifts like this, though it does not always land well. Some concepts drown in creativity without actually tasting good. Europizza proves the opposite is possible: bold and convincing can coexist.
Miso on a wood-fired crust
We go for the formula for two: snacks, small plates, one pizza to share, dessert. The only decision left in our hands is the pizza, everything else we leave to chance. First comes the monkfish “charcuterie” with black pepper, the fish tender and surprisingly meaty, finished with an extra virgin olive oil that adds just enough bitterness to round it out.
Then the server pours a small taste of natural wine. “A little funky, but it works with the dish,” she says with a wink. We take a careful sip. Fine, pour the rest.
“White miso, fresh tomato, mozzarella and polder parmesan, why did nobody think of this sooner?”
The pizza that changes everything
Then the pizza arrives. We tear off a slice, because cutting is for amateurs, and smell it first. Smoky from the wood oven, a hint of basil, something briny underneath the cheese. The crust is thick and crisp at once, the miso lending a depth we have not found at any other pizzeria in the city, the fresh tomato keeping everything in check.
What makes Europizza different is a menu that shifts with whatever is good that week. Small producers, seasonal vegetables, but also global flavors like miso and seaweed. Not a hundred percent local restaurant then, but a place where sourcing gets real thought before it lands on the plate.
Filter coffee instead of cappuccino
Just as we think it cannot get better, a scoop of hazelnut ice cream with coffee syrup shows up. Creamy, nutty, exactly sweet enough. Alongside it, an honest cup of filter coffee instead of a frothy cappuccino, which somehow makes more sense here than any dessert wine would.
The mood stays relaxed throughout: long tables, people glancing over at each other’s plates to see what just arrived, a staff that seems to be having as much fun as we are. Nothing here feels overdesigned, even though plenty of care clearly went into making it look that way.
Outside, cycling back along the water in the late evening, a last trace of woodsmoke follows us. Someone across the street leans against a bakfiets, smoking, and nods briefly as we pass, as if he knows exactly where we just came from.
